Almond Meal Hot Cakes- Trial 1

Yesterday, rather than studying for exams, my mind was non-stop wandering to delicious fluffy Japanese hot cakes. So, the next morning, I knew I had to have hot cakes for breakfast otherwise my studying would yet again be futile- this unfortunately has not seemed to work since I just created a blog on food, but that's a story for another day..

Finding two different recipes- Japanese hot cakes and Almond Meal Pancakes, I decided to try replace some of the ingredients in the hot cake recipe with the ones from the pancake recipe. Instead of flour-I used almond meal, instead of milk- almond milk.

The night before, I had been looking up for serveral alternatives for flour to make healthy tasty pancakes. I found that almond meal apparently makes cookies and cakes softer and moisty-er than than plain flour does, so I decided to put it to the test. My findings, have found that yes, that is indeed very true, but unforunately, that also means the pancake doesn't hold together very well. I ended up adding some flour to thicken up the batter a bit so it would hopefully produce thick hot cakes rather than pancakes. That didn't end up creating thick hot cakes, but at least my pancakes weren't falling apart like before. I guess, next time, maybe I'll try using some creamy vitasoy soy milk to thicken the mixture too.

 
 
Didn't turn out to be the hot cakes I was hoping for, but pancakes for breakfast has been a nice change from what I usually eat :)
